BEST Spelt Malt is used for producing full-bodied, top-fermented beers. 1.9-2.8 L. Up to 60% of grain bill.
It is a pale, well modified malt-aromatic product made from spelt, a hard-grained heirloom wheat. It imparts a
strong emphasis on typical spelt aromas, along with delivering soft malt notes along with hints of hazelnut aromas, and biscuit flavors. It is an ancient variety of wheat, which is often marketed as farro for Italian cooking (although farro is not always spelt). It is high in protein (~17%), which is one of the reasons it sees limited use in brewing. Its flavor is similar to wheat, but provides a slightly toastier character.
Spelt is an ancient grain and is known to possess a number of health benefits. For this reason, spelt was the favorite grain of the medieval pioneers of today´s health movement. Germen nun, Hildegard von Bingen, born in the year 1098 is famous for using spelt in her recipes. Likewise, spelt beer, is considered highly digestible and conducive to good health. This malt improves foam stability. It can also have other positive effects in the brewing process.
